Soltribe quickly grew into something much bigger.
We have offered everything from unique catering, event kitchen management, fully vegan weddings and pop-up dinners that support local causes. Through this evolution, with the support of many like-minded people, our vision has expanded to the desire to change the standard food narrative. Breaking with the idea that nutritious and healthy food cannot also be delicious and satisfying.
He seeks to make a difference in the current social and environmental landscape, informing the public that choosing what he eats is the biggest step he can take to change himself and the world in which he lives. 2020 was going to be by far our busiest year in our history.
Like many, the pandemic completely took away our ability to operate, but it particularly affected us, as we operate almost exclusively in large-scale events. Once again pushed to evolve, Soltribe creator and chef Keshava Rossi and his wife Lena Larson decided to take the opportunity to expand their vegan concepts to Latin America and officially established the first Soltribe Cuisine restaurant in San Miguel de Allende, Mexico. Now, with their two children, they hope to have an impact on vegan culture in Mexico as well as in the United States.
